Probiotic Marshmallows

  • 3 tbls gelatin

  • 1 cup filtered water (divided)

  • 1/2 cup BeSweet or other sugar free sweetener (I like allulose, monk fruit extract)

  • 1 tbls alcohol free vanilla

  • probiotic capsules (optional) open 1-3 capsules and sprinkle in, depending on your child's tolerance. You don't want to overdo it.

  • Lakanto monk fruit extract drops vanilla flavor (optional) only if you want more of that vanilla taste.


Grease baking dish (I use 8x8 but you can use up to 9x13) or use parchment paper. Sprinkle gelatin over 1/2 cup water in large mixing bowl. While gelatin is blooming, add the remaining 1/2 cup water to a small pot/saucepan and heat until boiling. Continue boiling for 5 minutes. Add BeSweet sweetener and vanilla to the hot water. Beat gelatin first briefly and then slowly drizzle the hot water mixture over gelatin mixture while beating. Continue beating until mixture holds soft peaks, at least 10 minutes. I use a hand mixer but a stand mixer would be even better! Add probiotics, if using, in the last minute of mixing. Quickly pour in the dish. You have to be quick or else it starts setting! Cover and let it rest overnight. Cut marshmallows with a greased knife or greased kitchen scissors. Consume within 4 days.
